Weekend Cooking is hosted by Beth Fish Reads each week and offers a unique way to merge booking with cooking!It took a while for summer to arrive here in the great Northwest, but arrive it did. And with it came my yearly desire for new summer friendly recipes. Every week I scour the few cooking blogs I know of looking for new inspiration. But this last week, we were on vacation and stayed in a hotel that had extended cable, which is something we do not have here at home. And on that cable was a station called the Food Network. I am sure you all have access to it and I am the last woman on earth to not. Anyway, I watched a few shows and then when we got home I spent some time perusing their website. I found a recipe that looked so yummy I decided we had to have it that same night.
It is a Emeril Lagasse's Bayou Chicken Pasta.

To say it was a hit would be an understatement. We were fighting for the leftovers the next day.
It was easy and did not require me to turn the oven on--a big requirement for summer meals.
So now, I am thinking I should check into some of his cookbooks. I am thinking of looking for this one first.....
The reviews on Amazon are very positive. I hope my library has a copy!

The fighting for the leftovers comment cracked me up -- that's how know something is a true hit -- when my husband calls dibs on the leftovers for lunch.
